Balsamic Chicken Tenders w/Veggies 






Makes 6 servings

Ingredients: 
2 Tbsp plus 1 tsp olive or avocado oil, divided  
8 oz fresh mushrooms, sliced 
16 oz fresh green beans 
1.5 lb. chicken tenders 

Homemade Greek Dressing:  
2 Tbsp extra virgin olive oil 
Juice of 1 fresh squeezed lemon 
2 cloves fresh garlic, minced 
1 tsp dried oregano 
1/2 tsp sea salt 
1/2 tsp black pepper 
Whisk all dressing ingredients 

2 Tbsp raw honey  
3 Tbsp balsamic vinegar (find a lower sugar variety) 

1 cup grape/cherry tomatoes  

Instructions:

Sauté mushrooms in large saute pan with 1 tsp of the oil, until just browing. Remove from pan, set aside. 
Heat 1 Tbsp oil over medium-high, add green beans. Continue to sauté until green beans are cooked, but crunchy. Remove from the pan, set aside. 
Heat remaining 1 Tbsp oil over medium-high, add chicken and season with salt and pepper. Cook 3-4 minutes on both sides and remove once browned & cooked though. Remove from pan, set aside. 
In the same skillet, lowering heat to medium, add your homemade Greek dressing, honey, balsamic vinegar. Heat & stir until bubbling. 
Add back in the mushrooms, and green beans, toss. 
Add back in the cooked chicken and fresh tomatoes. Stir for a minute or two to combine flavors & enjoy!




 

Green Smoothie Prep Packets 

We are all on the go each day with so much to accomplish in such a little amount of time.  I was able to find a really cool way of being able to get in your fruit and vegetables on a daily basis, with little effort.  It is always a great idea to prep your meals in advance, this way you don’t grab just anything when you are in a rush. Ingredients 

For each packet that blends 4 servings each: 
Optional 1 Serving Packet: 

2 cups fresh baby spinach in each (freezes very well) 
1/2 cup organic sliced strawberries 
1/2 cup organic blueberries 
1/2 cup blackberries or raspberries 
1-2 bananas 
optional: a handful of organic green grapes 

1/2-1 cup fresh baby spinach leaves 
1/4 cup organic sliced strawberries 
1/4 cup organic berries of choice 
1/2 a banana 

Instructions 

For each packet that blends 4 servings each:

Seal, place packets in FREEZER immediately. 
When ready to prepare, throw your packet ingredients in a high powered blender.

Add 2 cups liquid such as ice cold water, coconut milk, almond milk…etc.

Lose It App 



I personally have found it to be very difficult to write down everything I eat in a journal.  For some people it works for them, but for me... I absolutely write nothing down. Sad I know :( The good news is I love using my iPhone to jot down what I have eaten and how much I have exercised throughout the day. I am on my phone most of the time because I work on it to do my job, so why not use it to help me with losing weight.  

My job told me about this amazing application called Lose it.  It can be found in the Apple App Store, and also in the Google Play Store.  I found it to be very helpful when it comes to logging what I eat, monitoring the amount of calories I take in and also burn. The best feature to me is the scanner which allows me to scan the different foods I eat using the barcode on the product.  When I do this, it automatically pulls up the amount of calories, grams of fat and carbs that it contains.  Pretty awesome right? Infused Water-Detox 

The great thing about starting a new weight loss journey or even a journey to having a healthier body, is being able to detoxify your body.  Giving your body a really good detox allows your body to rid itself of different toxins that can cause harm to your body, and it also allows your body to have a moment to rest from the things we put into it. There are so many different products out there that are designed to detoxify your body, and some of their prices can be quit expensive at times.  

I personally wanted to take some time to detox my body after the holidays and my birthday, so I started to dig around online to see if I can find natural ways to achieve this.  I came across a website that gave awesome simple recipes to create detox water using fruit, vegetables, and natural herbs you can find right in your local grocery store.  I will be beginning this detox journey today and I do hope you are able to join this journey with me as well.

Day Spa Mango Ginger Water





























If you are wanting to boost your metabolism drinking mango and ginger water together is a great way to start! Ginger is known to destroy ovarian cancer cells, and it can also lower levels of colon inflammation and inflammation of the intestines, thereby helping to reduce the risk of colon cancer according to Natural Society.  It also can help with headaches, migraines, coughs, colds, nasal congestion, toothaches, swelling and pain.  How awesome is that! 

Mangos not only boost metabolism, they also aid in digestion, boost your memory and guess what, they also can increase your sex drive!  Hey Now!  So if you looking to spice some things up with your partner get you a couple of mangos and let us know what happened in the comments section jk lol! 

Mangoes are my number one fruit of choice, and not because they taste amazing, but it is also great for your health.  I was blown away after doing some research online on how many amazing benefits they have.  According to Medical News Today, many studies have suggested that increasing consumption of plant foods like mangoes decreases the risk of obesity and overall mortality, diabetes, heart disease and promotes a healthy complexion and hair, increased energy, overall lower weight.

Get Started: 

To peel the ginger use the back of a spoon or a vegetable peeler, just peel the part that you will be using. Using a sharp knife slice ginger into 3-4 coin sized slices. You want them about the size and thickness of the coin.  

-Drop into your pitcher and add in the mango. 

-Top with 3 cups of ice and then add with water.(the ice is important, it holds down the ginger and mango to help infuse the water) 

-Place in your fridge for 1-3 hours before serving.  

-When serving add a couple frozen mango chunks in a pretty glass for ice cubes. 

This will keep in the fridge for 24 hours.


How did Tiffany like it? 

I must admit, I actually did like it and I am about half way through with the container at lunch time.  I actually love it.  I added apples, cucumbers, and lemon to mine. I pilled my lemon because I was afraid it would have a bitter taste.  For the most part, I just taste the lemon.  It really is great over ice, and does not taste like regular tap or bottled water. It is easy to get down, and an easier way to detox.  The next one I am going to make is going to have limes in it. I can't wait to see how that one taste!
